Grilled Zucchini Pizza is a simple easy white pizza, made with mozzarella and fresh Arugula. Make it with either homemade or store bought pizza dough.

In Italy you never need an excuse to eat! At least I don’t. Especially Pizza. No matter where I go the grocery store, the bakery or a restaurant, my mouth always waters at the site and thought of Pizza.

Ingredients

  • Pizza Dough – either store bought or why not make your own Dough
  • Olive oil
  • Grilled zucchini slices – which can be grilled either on a pan grill or bbq
  • Shredded mozzarella – for pizza I use a firm mozzarella rather than fresh. Fresh is quite watery and could leave your crust soggy.
  • Rocket also know as Arugula or Rugula.

Here white pizza, meaning no red sauce or fresh tomatoes, but don’t forget the cheese, is quite popular, and it has become one of my favourites, if not one of the types that I order, buy or make the most now. And nothing better than topping that pizza with freshly grilled summer veggies. For this pizza I reached for the zucchini.

How to make it

Form the pizza dough, either Homemade or store bought on a lightly greased cookie sheet, brush the dough with a little olive oil. Bake until golden.

Remove the crust from the oven, top with the grilled zucchini and shredded cheese, bake a couple of minutes or until the cheese has melted.

Before serving top with rocket leaves and parmesan flakes.

How to make parmesan flakes

The best way to make flakes it using authentic Parmesan cheese, use a potato peeler to shave or make flakes, add as little or as much as you want on the baked pizza!

What is the difference between Parmigiano Reggiano and Parmesan?

Thedifference betweenthem is thatParmigiano Reggianocheese is authentic or DOP (Denominazione di Origine Protettawhich means Protected Designation of Origin), andParmesancheese is just an imitation ofParmigiano Reggiano. Reggianois always made in Italy, while Parmesancan be made anywhere, there are no restrictions on using the name Parmesan. And don’t forget a less expensive but also a DOP choice is Parmigiano Grana Padano.

Is zucchini good for you?

Zucchini isfull of antioxidants and nutrients. It’s low in calories, fat, and sugar. It is also a good source of Folate.

FAQ

Can I use different cheese?

You certainly can, you can substitute the all or part of the mozzarella with provolone, asiago or a firm goat cheese. But don’t forget the parmesan!

How to bake the best Pizza

Pizza should always be baked in a very hot oven 450F (250C). It’s best to top your pizza let it cook then add the shredded mozzarella cheese and bake until melted.

How to store left over pizza

Leftover pizza should be wrapped air tight or placed in an airtight container and stored in the fridge. I t will last up to 4 days in the fridge. Re-heat in a low oven or microwave.

How to freeze leftover pizza

It is best to freeze the leftovers sliced pizza on a cookie sheet until firm then move to a freezer safe container or bag. Separate the slices in layers with parchment paper or plastic wrap. It will keep for up to 2 months in the freezer.

Ingredients

  • 1 Pizza dough either homemade or store bought
  • 2-3 tablespoons olive oil (divided)

TOPPING

  • 2-4 small or medium zucchini grilled*
  • 1 cup shredded firm mozzarella
  • ½-1 cup rucola leaves (arugula)
  • ¼ cup parmesan cheese flakes

Instructions

  • Pre heat oven to 450° (250° celsius). Lightly grease the a medium cookie sheet with half the olive oil.

  • Form the pizza dough, eitherHomemadeor store bought on the prepared cookie sheet, brush the dough with a little olive oil. Bake approximately 12 minutes or until golden.

  • Remove the crust from the oven, top with the grilled zucchini and shredded cheese, bake 2-3 minutes or until the cheese has melted.

  • Serve immediately topped with rocket leaves and parmesan flakes. Enjoy!

Notes

Leftover pizza can be stored wrapped air tight in the fridge for up to 4 days or in the freezer for up to 2 months.
